Between Vernou-en-Sologne and Bracieux, this small village of 270 inhabitants is located a few
minutes from the entrance to the park of the Château de Chambord, in the "Sologne of the ponds".
It was in 1980 that the mayor, Gérard Lemaignen, personally created a café in a
house that belonged to him, an old farmhouse, called Le Col Vert.
Tenants came and went over the years, each with different plans…
It took the passion of a couple who were native to and in love with the region to work on the
revival of this old, typically Sologne farmhouse, respecting the memory of the place
and the village of Bauzy.
At COL VERT, the cult of nature and the Sologne terroir is everywhere.
A return to basics that continues deliciously at the table, while enjoying a
traditional "grandma's" cooking using only local products and over time
seasons.
